This is a quick and easy vegan pesto recipe. So you whiz everything together in a blender except olive oil. Once everything is blended then drizzle in olive oil on a slower speed until incorporated π
1 cup packed fresh basil,
1/2 cup pine nuts
3 tbsp. nutritional yeast
3 cloves garlic
juice of one lemon
1/2 tsp. salt, or to taste
3 tbsp. olive oil
Pesto is often used for pasta but I think this is good for on top of crackers, baked potatoes, to liven up mashed potatoes, on a pizza or stirred into soup. You can also use fresh coriander instead of basil for a change.
