Just swap mince for soy mince and beef stock for another tasty stock. I used tesco red wine stock pot.

Rice is often overlooked. I'm still trying to find another recipe which was basically just long grain rice with a whole chopped mango and I think some Spring onions. You can have it hot or cold just mix the mango in last. Super tasty.
Ooooh now that sounds nice. I think I am guilty of over cooking rice because I don't like it hard, so opt for too soft 😉
Depends on the rice 🤔 you can get away with that more with a risotto rice, can spoil a long grain rice though. 😁
