Strawberry ice cream πŸ“ πŸ“

This is strawberry ice cream I made.

It’s one punnet of frozen strawberries, the cream off a tin of coconut cream and a little of the water and a small drop of maple syrup. I like it to not be too hard and this was just right.

It’s very nice and not too sweet. (Maybe not the best photo but I’ve packed my nice glasses ready to move house but you get the gist and it was a beautiful colour).πŸ˜€

Haha. It was your ice cream posts that made me fancy making it. I’m going to do a peanut butter, banana one next.Thanks Debs, I Can’t wait to move in, I have one foot in one house and one in another at the moment!

Hi Agoodenough

I've just spotted your homemade Strawberry ice-cream, and it looks gorgeous. I wanted to ask whether adding the entire tin of coconut cream might be a good option too? Or is it purely the cream off the top - I was just thinking that if I opened an entire tin, I could mix it with the punnet of strawberries and it would make quite a good amount. But maybe it would be too thin? What do you think.

Hi, I made it twice. That’s what I was worried about. Once I just used the cream off the top and you are right it didn’t make much then I used 1 punnet of frozen strawberries and the cream off the top and added the coconut water from the tin a little at a time (as I wanted it creamy not icy) and I think I used half of the water. As the strawberries were frozen it was ready quite quickly and was creamy. What is now left in the freezer is frozen solid unfortunately so I will get it out a bit later and see what it’s like then and let you know if it’s still creamy. πŸ˜ƒ 🍦
