Wow, that is indeed staggering. It really feels like we might have reached a tipping point where demand leads to an increase in supply which fuels further interest and demand.
As I walk past resturants I often look at the menus and its noticable that in the last year or so almost all of the "fast casual" chains have vegan dishes now. Even this carvery chain whose name escapes me but whose logo is a chef with carving knives - ie the last place you'd expect a vegan to want to go - but they have multiple vegan options!
I have mixed feelings about this, and about the role of capitalism in the food supply in general, on the one hand the chain multiples probably have driven out a number of local businesses. On the other hand, the profit motive makes them unsentimental, they don't care about the argument between high fat and high carbs, or between paleo and plant based, if they see demand they'll supply it, and right now thats good for vegan diets.
