Ali1101, You might have occasional fluctuations in symptoms when you have a cold, virus, or other illness but when you are optimally medicated you should feel normal most days and ought not feel hypo one day and normal next.
If you feel hyper after coffee you might quite coffee or try decaff.

I did quit coffee , it's hard and any tiny caffeine in chocolate will cause the same... This is happened after levothyroxine.
Ali1101, people do seem to develop intolerances after they become hypothyroid. They're not always permanent and you may be able to enjoy caffeine and chocolate in the future.

Up down forwards backwards sideways. Unpredictable and hard to deal :-(. Very confusing and unmanageable at times. Forgotten at others
I always say having this condition is like riding a roller coaster (I have hashimotos) I can feel fine in the morning then awful at night time or vice versa. I can go a week feeling pretty well but then I always, always crash. I haven't got settled on a stable dose of thyroxine yet, even after 18 months due to my fluctuating levels, but thankfully I have been given the go ahead by my endocrinologist to have a 3 month trial of T3 added to my thyroxine in the new year, im hoping this might be the key to balancing everything out! x
In my case, I have unpredictable pattern from one day to another but on days when I'm ill, I tend to feel much better afternoons to night and worst in the morning.
Strangely enough I seem to come round in the evening.Hence I'm sitting here writing at almost 12o'clock midnight.I go to bed and can't sleep. I wish I could feel like this all day. As I'm sure you do when you feel well. Good luck..
