For maximum absorption and uptake Levothyroxine should be taken with a full glass of water on an empty stomach one hour before or two hours after food and drink, two hours away from other medication and supplements and four hours away from vitamin D3, calcium, iron and oestrogen.
Levothyroxine will speed up your slow metabolism and if you haven't already put on weight you may not you may not gain or need to diet. Avoid unfermented soy/soya and raw cruciferous vegetables like cauliflower, broccoli, cabbage (lightly cooked is fine) which are known as goitrogens and are thyroid unfriendly.
giving up gluten is sometimes advised for thyroid issues- there's plenty of information about that on the web. It has helped me, but my son is coeliac so it's possible I'm just undiagnosed.
