Finally, due to remote living, I've got some VitaCoco for the potassium. What my curious mind wants to know is: How does the Potassium know which deficient 'part' needs it first? Or is it just dispersed globally?

Low Potassium is a risk at the start of treatment of a severe B12 deficiency due to sudden cell proliferation but only at the very start of treatment. You mentioned your Potassium level was checked, do you have the result? I believe it's fairly straighforward to tell if there is a significant potassium issue based on that test result. 3.5mEq/L to 4.0mEq/L would be common but up to 5.5mEq/L is still normal. Although there's no issue to increasing your intake of high potassium foods (unless you have kidney problems), unless a potassium deficiency is present, they are not likely to have much benefit beyond placebo. Some additional medical details on hypokalemia here, which mentions typical lab ranges and descriptions of other possible causes for hypokalemia. I am not medically trained.
