It's cooling down around here, which always makes me feel like making a pot of soup to warm us up. Soups are especially great when we can freeze some for later; cook once, have ready-made meals for the times when I don't want to or can't cook.

I couldn’t believe that this very tasty soup has so few ingredients and is as easy as opening a few cans. Everyone asked for the recipe when Chris brought this to a potluck.
4 cans black beans, rinsed and drained 2 tsp cumin
3 c chicken broth ½ c chopped fresh cilantro
2 c salsa verde sour cream
In a large pot, place black beans with broth. Using a potato masher, mash the beans lightly, or you may puree them in a blender for a very smooth soup. Add salsa verde, cumin, and the cilantro and heat 10 to 15 minutes. If soup is too thin, you may add a little cornstarch dissolved in cold water to the soup, stirring until thickened as desired. Serve with a dollop of sour cream on top of each serving. Garnish with additional cilantro, if desired.
Note: I didn’t have any salsa verde on hand, but substituted about 8 oz. homemade red tomato salsa.
Sounds yummy, I'll look up some of my recipes and post. I did a copy and post into a word document to save it.. Being an old fashioned cook, I like to make my own Chicken Noodle, Split Pea and white navy beans with ham. Always with freshs rolls and or homemade cornbread.
