It's brilliant. I didn't realise what buffalo wings should be like, as I have never ordered them at a bar. The recipe worked, and the chicken was different to any I have cooked in my oven before.
It is madness isn't it! Same with me - sometimes I'm eating out, and eat more than I usually would, but then find the scales still drop the next morning because I've chosen low carb food. This old body has finally learnt it has a ready supply of fat stores to use up!
We just call them "wings" 'round here. Never saw baking powder added before. Any idea what that's about?
"Buffalo wings" is the name of a very specific American dish, from Buffalo, New York; deep fried unbreaded chicken wings, coated with a mixture of butter and hot sauce and dipped in blue cheese dressing, served with celery.
If I had prepared them any other way, I would just call them "wings" too. Eg marinate in soy sauce, ginger, garlic and chilli before roasting π
Baked chicken wings are delicious, but have quite a different appearance, taste and texture to fried. The baking powder (and salt and drying) is to aid the browning and crispness of the chicken skin.
