I suspect that any effect you feel after one workout is largely psychological, but your body will adapt remarkably quickly to the extra demands put on it.

I found that too. It took me 2 weeks to get to W1R3. The week 1 runs are 8x60 seconds if I remember correctly. I did: W1R1A - 1.5runs, W1R2A - 4.5runs, W1R3A - 8 runs, and then W1RnB - 8 runs, and never looked back.
This could be psychological, but I don't think it's all that. We know that running remakes the muscles from within, by causing micro-tears which repair over about 48 hours in a healthy person - which is why you are not recommended to run every day as a beginner. The speed you ramp up your ability at that very easy activity level is probably all just age and basic fitness.
