10 -12oz chucky breast

3-4 tsp Cajun spice (see below)

1-2 tsp sage

1 large red pepper

2 sticks celery

2-3 cloves garlic (crushed)

8 oz smoked sausage

4oz smoked ham

1\2 can cherry toms or 6oz fresh

2 tbs oil for frying

1 1\2 pints chuck stock

Cajun spice

2 tbs salt

1\2 tps cayenne pepper

1\4 tps black pepper

1\2 tps onion powder

1\2 tps garlic powder

1 tsp sage

1tsp oregano

1\2 tsp paprika

1/4 ground bay leaf

smidgen of fenugreek

fry off chuck and smoked sausage in a little oil, remove from pan, set to one did with oil, add rest off oil to pan,rice and spice mix, heat slowly making sure all of rice is coated, add stock and bring to boil, reduce heat, add more water if necessary as rice cooks , once rice cooked drain, add back chuck and smoked sausage, mix well and serve. I like ti add chorizo

2 tablespoons of salt??? surely that can't be right?

But thanks for that, I'll give that a try next week. May have to get in garlic powder though and fenugreek - never heard of that one before.

Would normal crushed garlic be okay. I've got a few bulbs of garlic I need to use up.


I would like to try it ,but I don't think my breathing could cope with it.


Sounds delicious, but I dont think my hiatus hernia could cope with it. Us frail spirits.


Nom nom - I'm up for this recipe - the garlic should keep the manic cat at bay, it could be a life saver ! :)
