I have titanium staples and a titanium plate in my chest where the surgeon pulled my sternum back together. Do these set-off airport security scanners? If they do, how do you explain this to the security officers?

Most airport scanners will not be set off with this, assuming you carry a scar even if it did would be explainable.
Ask your clinic for a certificate (which is in several languages) which tells officials at airports, Eurostar, museums etc that you have an implant that might be affected by strong magnetic fields. While some of the security portals are safe, I don't risk it. Officials recognise the certificate and will give you a security check which doesn't involve the scanner. I photocopied my certificate and got a few of them laminated as I have used mine many, many times in the last 5 years.
I have a plate and screws on my left femur as the result of an accident. This sets off some scanners and not others - t has even triggered one going out of Sainsburys. Usually it is not problem but I had one thicko that after using a hand scanner decided I probably had a knife! Sadly some people do not receive adequate training!
