egg and dairy free chocolate cake, if any wants receipe it can be given it is yummy! Esp with icing on the top!

Custard biscuits

I suppose nowadays we should call them custard cookies. Spent a long ten years with a built in oven that was hopeless for baking. Last year, summoned up the courage to spend the pennies and buy an all singing, all dancing oven.

Custard biscuits are back on the menu, with fairy cakes, honey buns and gingerbread. 8)

Egg and dairy free chocolate cake (can also be buns)

from alice sherwood, the allergy free cookbook!

Cake:

340g plain flour, 400g caster sugar, 1 3/4 tsp bicarbonate of soda, 55g cocoa powder (check it doesnt contain milk) 1/4 tsp salt, 450ml soya milk, 100ml vegetable oil, 1 1/2 tbsp vinegar and 1 1/2 tsp vanilla extract.

Preheat oven to 180C or 350F or gas mark 4. Grease and line two round tins.

Put all ingredients in a bowl in the above order and stir until smooth and all mixed together. Pour in to two tins. Cook in the oven for 40minutes. Let it cool then take out of the tins.

Icing:

175g dairy free spread (i use soya pure spread), 450g icing sugar and 6 tbsp cocoa powder. Mix together and spread over two cakes or make into one layered cake.

It is really tasty i love it lots! Infact i restrict myself to making it once a month only else it would be all i eat!

Found a good cheat for rubbish bakers like me by accident best not to ask!!

use dietary specials wheat free choc cake mix whizz with tin of apple pie filling or 2 jars baby food apple sauce instead of egg dairy free marg instead of butter and amazingly makes something which actually resembles a cake!

Chocolate brownies...very easy and GF and Dairy free =D

1 cup flour (gf) (I find that GF flour that has xanthum gum in are best as they make the result less crumbly)

2 cups sugar

1 cup flavourless oil

1 cocoa (I use hersheys)

1 cup chocolate pieces (dark, dairy free)

4 eggs well beaten

a few drops of vanilla essence

mix sugar flour and cocoa then add oil, eggs, choc and vanilla,

Bake in oven for 40min (I use a microwave and it takes about 20 on a moderate heat...I have no oven :( )
