I avoid caffiene as it sends my heart racing, also minimal salt too - I don’t know if drinking a bit extra water might flick it out not sure
My last Starbucks Soy Latte was five years ago. It put me into afib within a minute. Switched to supermarket strength coffee, since. Lately, switched to decaf, because anything with caffeine seems amplified now that I'm on daily diltiazem. That said, before I was on PIP Flecainide, I sometimes naturally converted with a strong cup of coffee. What puts you in afib, sometimes takes you out of afib.

Caffeine has never been a problem for me, but coffee was. I gave up drinking coffee 16 years ago. Other caffeinated drinks like tea and cola don't cause me any problems.
stick to decaffeinated coffee!
Apixaban has a short half life of about twelve hours, so I am surprised you were told to miss the evening dose. That would mean by the next morning you were not well protected.
I suspect you should have continued as normal with the evening dose, and taken care during the twelve hours following the accidental double dose.
I hope all went well, as I am pretty certain it would.

My personal theory (no medical quals) the coffee is not to be blamed solely. Instead you have had a warning sign that you are currently running very near the AF threshold and even something relatively normal trips you into AF. Therefore certainly cut down on the coffee as that will help but also look elsewhere to make more lifestyle changes.
I noted shortly after 2 ablations got me into NSR after 3 years constant AF that my heart was very sensitive to coffee. So i went cold turkey caffeine. With hindsight I think caffeine may have got me into constant AF in the first place !
When asked about my coffee drinking, I always like to explain that in my life I have had to give up drinking, gambling, smoking, sugar, fat, salt, animal food products, and wild women, but I will never give up coffee. Of course, that’s just perhaps my lame attempt at humor, but there is an element of truth in all of that statement, and coffee in moderation really is one “vice” that I enjoy immensely that has never caused me any AFib or other health problems.
