Quick update on me. Nearly 18 months post my second ablation and no AF. Still taking 1.25mg of Bisoprolol as when I tried to cut down my heart had some palpitations so not sure if this was a coincidence or not.

Most likely the problem is not the heart, per se, but the vagal nerve. This nerve is like an information superhighway from the brain to a range of organs BUT most notably the heart and the digestive system.
I have experienced this for some years and have a workable food plan now and my AF is well controlled by diet and medication.

A gastroenterologist will understand this, seldom do cardiologists.
Interesting to see chocolate and cheese mentioned as these are frequently cited as problematic for migraine sufferers and I recently came across a reference to ocular migraines (the shimmery lights effect without the headache) in connection with AF...... I have AF and also have ocular migraines. I wonder whether I should cut out cheese and choc - or is life complicated enough already !!!!
Dark chocolate (bar; 162 grams) can have 70 mg of caffeine, so no surprise there that it can trigger an episode. Caffeine is one of my AF triggers.
Mine is triggered by a high carb meal. If I eat a plate of pasta I can pretty much guarantee an attack that night. I also noticed it when eating gas inducing foods. Seems like as my stomach swells and gets hard, it pushes on my heart. I have been sticking to the Keto diet and have not had an attack in months. The cardiologist is onboard since my weight is down 30 pounds and BP has dropped 20 points with no meds.
