Does anyone have any information on the safety of taking an iron supplement to combat anemia in patients with advanced PC? Is it safe or have any value?

It depends what is causing the anemia. Iron is toxic. Don't take it if you don't need it.
A iron serum blood test will tell you if you are dealing with low iron in your blood. If the result is low, discuss the possibilities with your doctor.
I just eat a little more grass fed, grass finished Beef do my diet if anemic. Natural iron seems to be more absorbable then supplements. Good luck, I was slightly anemic for 3 1/2 years and no problem,,, kind of goes with ADT.
I struggle with this. My hemoglobin is naturally low. But iron supplements cause havock with my bowls.

My take away is that the total iron concentration, or saturation percentage is what your trying to manage. Iron can be unbound in serum, used in hemoglobin, stored in ferritin and transported by transferin. Total Iron Blood Concentration (TIBC).measured with a complete iron panel, gives you the relationship between those. Id suggest discussing with your doctor.
Don't automatically assume that iron deficiency is the cause. Listen to what Dy. Myers has to say, below.

Dairy binds up iron and prevents assimilation so avoid it when consuming foods with iron. No cheeseburgers. I read about not consuming milk and meat in an old old book.
Even though they're considered lucky.... do not eat horse shoes.......
