Sunday Lunch/Dinner: Homemade Gluten-free Vegan meatballs with Beetroot Pasta. πŸŒ±πŸ„πŸ…πŸ§…πŸ˜‹β€οΈπŸŒΊ

Hello everyone, hope you have a peaceful Sunday and a wonderful start of the week ahead! πŸ€—

Today I’m trying out the new sorghum beetroot pasta so I made some gluten-free Vegan meatballs. πŸ˜‹

Recipe:

1. Instead of using breadcrumbs I made almond meal by grinding raw almonds with skin (good source of calcium). The amount used was full cup of almond meal in the end.

2. 1 can of chickpeas, drained, rinsed and blend in a mixer.

3. Mix all together in a bowl: half of an onion, diced, ground flaxseed (3 tbsp soaked with water for 5 mins), almond meal, blended chickpea, herbs seasonings, garlic salt, and peppers.

4. I used an ice cream scooper to make into a ball and baked at 180C for 30 mins.

The meatballs came out delicious with sliced mushrooms, freshly chopped tomatoes in tomatoes paste sauce with beetroot pasta. πŸ˜πŸ‘

We had autumn fish pie here for our Sunday lunch and Baby enjoyed her leftover fish!

How's Sonya and Lucy getting on?

Baby is well and is being kept in tonight due to Halloween but we have enjoyed our Halloween weekend though.

That sounds wonderful Catgirl, Im glad Baby is doing great and continues to be spoiled by mommy. Awe do you dress up Baby for Halloween? Last year it was Bumblebee 🐝 but not this year.

Your lunch sounds and looks delicious. Today I had lunch with my mum: cauliflower, Brussels sprouts, garlic, potatoes and smoked tofu. My mum made egg free chocolate cupcakes with dairy free chocolate buttercream frosting πŸ˜‹She decorated them with sprinkles. I didn’t think of taking a picture 🍰

It was a good lunch. I still am full since there’s pasta so no room for dessert yet. 😁Awe your lunch sounds so healthy and delicious. πŸ˜‹πŸ‘ Sounds like your mum made a little cupcakes 🧁party so festive with sprinkles and scrumptious buttercream frosting. I haven’t figured out how to make vegan frosting yet. Did you save some extra for tomorrow too? 😁

I think I might have eaten the last of the cupcakes ☺️ My mum uses a non dairy margarine for the buttercream, I’m not sure how she makes it. It’s not something I’ve tried to make.

Awe that means your mum cupcakes are so delicious and well loved. πŸ˜‹πŸ‘Very interesting. I tried once before and couldn’t whip it up even with the blender mixer, I’ll do further research. Maybe butter is the missing ingredient. πŸ˜πŸ‘

With all the seasonings, they give good flavor and the almond meal gives nutty, firmer texture when baked. Yes I think for spaghetti or pasta, the tomato sauce is key to the dish. πŸ˜‹πŸ‘

It’s 6pm over here and there are no kids come by for candies 🍭, I’m still waiting… 😁

Hmmm the beetroot pasta tastes good but can’t tell beet taste, very quick to cook and the red color disappears though.
