Today Iβm trying out the new sorghum beetroot pasta so I made some gluten-free Vegan meatballs. π
Recipe:
1. Instead of using breadcrumbs I made almond meal by grinding raw almonds with skin (good source of calcium). The amount used was full cup of almond meal in the end.
2. 1 can of chickpeas, drained, rinsed and blend in a mixer.
3. Mix all together in a bowl: half of an onion, diced, ground flaxseed (3 tbsp soaked with water for 5 mins), almond meal, blended chickpea, herbs seasonings, garlic salt, and peppers.
4. I used an ice cream scooper to make into a ball and baked at 180C for 30 mins.
The meatballs came out delicious with sliced mushrooms, freshly chopped tomatoes in tomatoes paste sauce with beetroot pasta. ππ

We had autumn fish pie here for our Sunday lunch and Baby enjoyed her leftover fish!

Baby is well and is being kept in tonight due to Halloween but we have enjoyed our Halloween weekend though.

Your lunch sounds and looks delicious. Today I had lunch with my mum: cauliflower, Brussels sprouts, garlic, potatoes and smoked tofu. My mum made egg free chocolate cupcakes with dairy free chocolate buttercream frosting πShe decorated them with sprinkles. I didnβt think of taking a picture π°
It was a good lunch. I still am full since thereβs pasta so no room for dessert yet. πAwe your lunch sounds so healthy and delicious. ππ Sounds like your mum made a little cupcakes π§party so festive with sprinkles and scrumptious buttercream frosting. I havenβt figured out how to make vegan frosting yet. Did you save some extra for tomorrow too? π
I think I might have eaten the last of the cupcakes βΊοΈ My mum uses a non dairy margarine for the buttercream, Iβm not sure how she makes it. Itβs not something Iβve tried to make.
Awe that means your mum cupcakes are so delicious and well loved. ππVery interesting. I tried once before and couldnβt whip it up even with the blender mixer, Iβll do further research. Maybe butter is the missing ingredient. ππ

With all the seasonings, they give good flavor and the almond meal gives nutty, firmer texture when baked. Yes I think for spaghetti or pasta, the tomato sauce is key to the dish. ππ
