Today I made purple yam and lentils curry, such a savory and heart warming dish to enjoy. ππ
I usually gravitate towards veggies that has vibrant color and purple yam is one of them which has anthocyanin, a great source of carbs, potassium, and vitamin A and C. In addition, lentils are great source of protein and full of health benefits, Vegan food for life!ππ
Detailed Recipe since some of my friends want to start cooking more vegan dish for their meals now:π€β€οΈ
1. Soak 3/4 cup of lentils overnight, rinse and drain before cooking.
2. In a medium heat pot, add prepared lentils, 2 cups of water, 1 tbsp of turmeric powder and black pepper, 3 bay leaves (remove in the end). Let it boil while preparing other ingredients.
3. Cut 1 large purple yam into small cubes, half an onion, diced 2 inches fresh ginger, 1 cup of baby tomatoes and add them into your pot.
4. Add 1 tbsp of curry powder, 1 tbsp cumin powder, 1 tsp coriander powder into the pot while lowering the heat.
5. Last step, once all ingredients are cooked to soft texture, add 1 cup of coconut milk (up to you if you like more), more water if itβs too thick. Little bit of salt to taste and enjoy.π
