This weekend is our celebration of Mid-Autumn Festival so yesterday I made many mini mooncakes to share with family and friends. A little background about this Mid Autumn Festival: in Asia, ancient emperors worshiped the moon in autumn to be thankful for the harvest. People would take a three day break to celebrate for all the abundance from Mother Nature blessed them through out the year. In modern days, we celebrate Mid-Autumn or Moon Festival with lanterns decoration over mooncakes and good food among family and friends. ๐ฅณ๐
Recipe:
Step1: Mooncake skin
1. Add 100g glutinous rice flour, 100g rice flour, 50g tapioca starch, 100g cane sugar, 300ml coconut milk and 2 tbsp of coconut oil together. Mix well and steam until it gets to clay like texture. (Make sure steam vapor wonโt drip back into the flour because it will mess with the final texture ๐ ). In standing mixer, let it kneed for 10 mins. (Or you can wait till it is cool and hand kneed)
2. Wrap this up with plastic and keep refrigerated for at least 5 hours up to 2 days max to get a uniformed harder texture.
Step2: Filling
1. Steam 400g of purple sweet potatoes, peeled, and half of a beet to keep the vibrant color. Let it cool down first.
2. Blend with 100 ml sweetened condensed oat milk, 2 tbsp coconut oil, 150 ml coconut cream, 50g tapioca starch and 120ml water in food processor.
3. Steam the mixture until clay like texture. In standing mixer, let it mix at high speed for 5 mins.
4. Wrap this up with plastic to refrigerate along with snow skin.
I use 50g mooncake mold to create desired patterns. I find 17g for the skin and 33g for the filling works great with this cake mold. ( in reply, pictures collage for demonstration how to prep for molding process).
I got 18 mini mooncakes out of this amount and packaged in these little pink containers for gifting purposes. I will make another batch with 100g mooncakes for table serving over tea later on this evening . ๐๐
