Vegan cupcakes 🐾🙂🌱

Hi I made these cupcakes this afternoon as I had some spare time due to a couple of cancellations and its tipping down with rain so I was happy to be inside baking.

I used a standard sponge mix (pure butter, coconut sugar, SR flour) with orgran egg replacer.

They worked out well. I think it was due to Lola’s magic touch. She is now wrapped up snug as a bug......and I’ve got cakes to eat 👍😋

Ah thank you Debs. Icing sugar and pure butter with a dash of vanilla bean extract 😋

I think she is getting a bit tired 💤 one week into her holibobs.
