Potato and spinach stir fry and red lentil dal from Vegan Richa’s cook book. Stunning result. My wife (not vegan) loved it so will double up next time to start stocking the freezer. Only a baby step toward developing a good vegan diet but a step nonetheless!

Well done you. Sounds delicious. I love dhal it’s one of my favourites. I’ve just looked up some Vegan Richa recipes and they look good. Thanks for posting this it’s great to share ideas 🌱🌱🌱

Great stuff. I use Bosh and Bish Bash Bosh a lot but find they are heavy on the fruit pretending to be veg ( like tomatoes peppers and corn) and low on what I call real vegatables. But delicious though.
