It's great. From about 11 o'clock my mouth starts watering as I look forward to it
And the best thing is I don't feel tired after eating but full of energy, whereas when lunch was pasta and heavy sauce I used to want to go and sleep afterwards.

I popped back here to ask again about your delicious lunch - I know you said it's cold, but I'm wondering how you do it - i.e. when do you cook the rice, and how long do you keep the rice before adding the other ingredients, and how long typically do you leave them marinated before you eat it? - I've not done much with cold rice dishes, but I'm keen to try it. It looks really good.

I usually cook the rice in the morning (sometimes use quinoa if i'm in a hurry as its quicker to cook, or cook lentils the night before and leave in the fridge), then mix all the ingredients up in a lunchbox with the balsamic to take to work. So i guess its about 4-5 hours marinating. But I have mixed it all up just before eating, and then i just use a bit more balsamic.
I sometimes add sliced pickled jalapeno peppers that gives it an extra kick. I'd like to try pickling my own sometime.
