I was reading a resurgence magazine and there is an article saying that Lancashire Hospital Trust has launched an extensive Vegan menu to meet the needs and expectations of patients, staff and visitors alike. The menu includes quinoa with stir fry vegetables and a Cajun spiced burger.

There is more on the article at plantbasednews.org.

This is definitely exciting news and a step in the right direction! 🌱
