They could do, it would just depend on the person, we are all different!
If the processed meat contains no wheat or wheat derivatives, I am OK with it. Not that it is something I eat routinely, but I would be ok with a GF ham sandwich for example.
Eating processed foods are not good for anyone. I have found they trigger me
You can try a small amount and see what happens. They are good, but not so good for you.

If no lactose, not smoked and from cow or chicken or turkey and not too fat I'm okay with it. Have to mind histamine releasing/triggering food.
