As I am one week into another run of the excellent Gut Makeover (Jeannette Hyde), I have just popped a loaf of banana bread into the oven. Do you best to opt for organic as much as possible for the ingredients:
Recipe:
3 x ripe banana
220 grams ground almonds
2 x tablespoons honey or maple syrup
30 grams ground flaxseed
3 x eggs
2 x tablespoons olive oil or 30 grams butter
1 x teaspoon cinnamon
1/2 teaspoon bicarb of soda
Preheat oven to 170 degrees C. Line a loaf tin with baking parchment.
Mash the bananas with the olive oil or butter in large bowl. Add cinnamon, bicarb, honey/maple and eggs - whisk together well. Add the flax and ground almonds and mix.
Pour into your lined loaf tin and bake for circa 1 hour - might need longer depending on your oven.
