that sounds nice, what do you use to wrap around it, I thought it was seaweed? :)

Sea weed

Yes you buy it in sheets at the supermarket, and buy sushi rice(it's stickier than normal rice). Lay the rice over sheet of seaweed, but not right to the edge, put filling in centre and roll up quite tight pop in fridge couple hour and sorted, you do need bit soy sauce or wasabi paste to put on yummy, can fill with. Any thing you like

You're speaking my language, Tracey, you're speaking my language. As I've just posted on another of your threads, I really admire your sushi-making skills. Mine always unravels. :o

So glad I have a fellow foodie on the forum! :)

What a good idea! :D

Yes, let's do that Tracey! I have been adapting some of my recipes to make them lower in fat & calories. I often prepare two versions- one for OH with real calories in it :D and a low fat/low calorie version for me. I also have an increasing repetoire of low fat/calorie counted meals.

I shall post some of my recipes over the course of the weekend though probably not today as I have a shedload (no pun intended!) of gardening to do...:)

Yes well said, I am all for good tasty food, my new year resolution was vegetarian and fish free meal once a week, and 2 fish a week the rest meat sooo have been sticking to that and it's working.

My oh is spoilt, he said the other day, a lad at work had egg and chips again for tea, hubby quick as a flash said, what,s chips. We never have them may be once a year as a treat. But then again he's not a foodie like me, nice to fined another foodie on here.

Could be interesting, load of low fat, good carbs, to help those ever increasing craves we have,

You have good weekend:)

And you, Tracey :)

Have just finished the gardening (or as much as I intend to do today anyway) so will take the opportunity to post a couple of healthy fish recipes I often cook midweek:

Tomato & thyme cod (serves 2- 172 calories per portion)

1/2 tablespoon olive oil

1 onion, chopped

400g can chopped tomatoes

3/4 level teaspoon soft brown sugar

few sprigs of thyme, leaves stripped

1/2 tablespoon soy sauce

2 cod fillets (any white, flaky fish will do- coley or pollack are also good)

Heat the oil in a frying pan, add the onion and fry for 5 mins or so until lightly browned. Stir in the tomatoes, sugar, thyme and soy. Bring to the boil then reduce to a simmer. After 5 minutes slip the fish into the sauce. Cover and gently cook for 8-10 minutes until the fish flakes easily. This one is nice with baked spuds.

Steamed fish & pak choi parcels (serves 2- 124 calories per portion)

2 plaice, haddock or other white fish fillets (I usually use haddock for this one)

1-2 pak choi, sliced (depending on the size of the pak choi. I sometimes include some sliced kohlrabi too).

2 spring onions, shredded

1 red chilli, thinly sliced

1.5 cm root ginger, cut into matchsticks

1 tablespoon soy sauce (or fish sauce works well too as an alternative)

juice of 1 lime

1tsp sesame oil

Heat the oven to gas 6. Place each fillet in the centre of a large square of foil. Top with the pak choi, spring onions, chill and ginger. Mix together the soy sauce, lime juice and 1/2 tablespoon of water and spoon a little over each fillet. Turn the foil into parcels. Place the parcels on a baking sheet and bake for 10-15 minutes until the fish is cooked through. Open up the parcels and drizzle over a few drops of sesame oil. Serve with rice or noodles.

Please do share some of your recipes, especially fish ones as I am always on the look-out for tasty fish recipes for the week. :)

My kind of cooking

Yes love fish cooked in paper parcels, often do it with salmon, sooo nice and quick, plus healthy. Like it

Potatoe galette with pepper courgette vinigarette. Plus white fish of your choice.

Slice potatoes thinly, do not put in water, the starch hold them together.

Brush a baking sheet with oil or butter, and make a flower with potatoes, dot with butter. Cook on 180 or I guess gas make 6 or 25 mins

Slice courgette on the angle, dry fry either side untill brown, approx 6 mins in total. Add some red peppers, you can cheat and use out out of a jar, mix with crushed garlic, one Clove is enough, olive oil, squeeze lemon, bit of basil if you have it, but no worries f you don't. Salt and peper.

Fry fish of your choice skin side down will only take 3 mins, put in oven couple mins, ready

Put potato galette on plate, put peper and courgette on side, fish on top, squeeze lemon your done quit nice with pak choi

Really not to many call for great tea time treat
