Sadly, prawns are ludicrously expensive, here, so it's a rare treat. I had it a the starter when out to dinner last night, but could easily do as a main course. Yummo.

One of my main go to lunch options, other than cheese omelette or tuna salad. Can’t beat a good prawn cocktail salad.

Tonight's dinner was kielbasa and sauerkraut, accompanied buy asparagus, and avocado with tomato.

No photos, because I don't style every thing I eat, and I don't need anyone's love to enjoy my dinner.

I have been steaming a massive amount of asparagus and boiling eggs this morning, ready for weekday lunches. I have also made my salad dressing for the week - roasted red pepper and mint with lots of olive oil and a little bit of garlic. A bit more carby than my usual weekday dressings but had red pepper and garlic to use up.

This afternoon i'm making a massive pot of chicken and vegetable soup for individual freezer portions. I use a whole roast chicken and I don't usually put the skin in the soup because it goes flabby. I end up eating most of the crispy skin straight from the oven so it's quite a special day for me!

I'm going to be eating a lot of anchovies this week as I feel particularly drawn to them lately and I really like them with asparagus which is pretty abundant right now.
