So far so good, but the labels do confuse me on what is safe & what isn't. Is there a UK page which lists those ingredients which are safe for us to eat? The terms are very confusing.

If you go onto the coeliac uk site they have a list and videos of how to read labels. Lots of info within the site.
Bold printed words are the ones to look out for and gluten is in grains ie. wheat but lots of hidden ie. soy sauce.
Hi Widget, all supermarkets and most food manufacturers will send you a list of their gluten free foods. However there will still be foods with gluten in them because it is under 20ppm so supermarket own brand malted breakfast cereals will be on the list even tho' they list barley as an ingredient. There are also potato crisps that are labelled as gluten free but also contain malt vinegar. And then theres oats and not all coeliac can tolerate oat gluten. So we need to be aware of this.
The UK is one of the few countries that say malt vinegar and malted breakfast cereals are ok for coeliac if they are within codex. And I believe that this is because we as coeliac can get codex wheat starch on prescription and as this is within codex all other foods within codex are deemed ok. I point this out as malted breakfast cereals make me and many others ill. And at the end of the day gluten is gluten so if any of these foods make you ill as Lisahelen says look at the label and what is highlighted regardless.
If you are very sensitive to gluten then wheat derivatives like maltodextrin can contain around 4ppm and wheat derivatives do not have to be labelled as such in the UK/EU so if you're very sensitive then you need to know this. And if it makes you ill then avoid it...
