I have two questions. The first is as follows. I purchase my Olive Oil from Costco, first cold pressed extra virgin and certified organic. Is this a good choice? Also I’m wondering about salad dressing. Can I get some tips on what to use? What do you all use and do you blend anything with your oil?

I don't know what brands Costco carries. I'm sure it is a mix but all of the phony ones also claim to be extra virgin so be aware that there are liars bottling oil. I'm told that there is more profit in fake olive oil with no risk compared to marijuana. Look for the seal of the COOC as one way to check. That is the California Olive Oil Commission run by UC Davis. Those brands submit their product for testing. I've just used oil and vinegar as a dressing, but I imagine some herb infused products would be fine as well.
My doctors at the University of Chicago NASH clinic recommend Apollo brand oil. It has the most polyphenols that aid the liver. It's available online.
Olive oil mixes pretty well with Greek yogurt. I also add it to tuna/tuna salad. Good luck, and let us know what your favorite olive oil/dressing combo is.
