Brazil nut and walnuts. I eat all kinds of nuts though and I bake cakes with ground almonds in place of flour and replace sugar in cake baking with Erythritol, a natural sweetener which can be bought in a container from Amazon.

I have never been a lover of artificial sweeteners but Eryrithitol is one of the best and one would need to use a lot to get any of the side effects. I only use it for baking because I do enjoy a piece of cake a couple of times a week. Otherwise, I satisfy my liking for sweetness with berries or eating an apple, an orange or a pear.

I eat a variety of nuts and seeds live, Greek yoghurt, tomatoes, celery, celeriac as well as those on the list. The only bread I eat is Rankin's Irish soda bread; one slice per day.
Is the Irish bread gluten free? That sounds good. I have 2-3 Greek yogurts a day depending on what the meals are being planned for everyone. I usually have a Greek yogurt every morning with 2 hard boiled eggs for breakfast for the extra protein and low carb..
The Irish Soda Bread isn't gluten free, I am afraid but I did come across a home made version that is gluten free while browsing last week and thought I might give it a go but I haven't saved the link so will need to seek it out agin via Google.

Have you ever tried eating celeriac instead of potato. It is a lovely little know veg and very filling, very low carb. I buy a big one, peel it, chop it in chunks and cook with a very small amount of water in the microwave for 20 minutes until it is soft and able to be mashed. Once cold, I make it into portions for the freezer and defrost as required. It is unpopular because people find it difficult to peel but if one uses the Zena Swiss Star Peeler or a similar type they will make very easy work of peeling anything in no time. How to cook celeriac can be found on Google and youtube.

I eat, what I consider, healthily all the time. If I want more carbs I give myself slightly more insulin. I exercise a lot and have a good weight so I think I'm doing ok.
That's good! I usually have to do slightly extra insulin when we have special occasions and celebrations since the numbers tend to go a little higher if I don't and the people we have celebrations get upset if I don't join in on the cake (they special order gluten free for me if my mom doesn't bake something for me to have for the celebration ).

This all sounds good. I usually do a smoothie with Greek yogurt mixed in. Haven’t done one for a while, but I’m thinking about it for a few more weeks from now. I love nuts, cucumbers, eggs, etc..😀👍🌈
I eat these separately as snacks as well as in other dishes and collectively in salads and stir frys with a bit of olive oil and no salt seasonings

SUGAR AND FLOUR FREE CHOCOLATE BROWNIES

1 cup fine almond flour
•1/4 cup cocoa powder
•2 tbsp dutch cocoa or additional regular
•1 tsp baking powder
•1/2 tsp salt
•1/3 cup melted coconut oil or butter
•3 tbsp water or additional oil
•2 eggs,
•2/3 cup granulated erythritol
•1 tsp pure vanilla extract
Instructions
Preheat the oven to 350 F. Gas mark 4. Grease an 8-inch oblong or square baking tray, and line with parchment. Mix all ingredients well. Spread evenly into the tray. Smooth down, using a second sheet of parchment if needed. Bake 20 minutes on the centre rack, then let cool completely and they will continue to firm up. They also firm up even more if you refrigerate very loosely covered overnight. The brownies are delicious with or without frosting
