I have heard some saying that their glucose level increases by 100-150 from base after a small meal. tell me what could be the real reason ?

I meant by small meal is the one with low cal like one or two idlis with a small qty of chutney. One understands, if the meal is full carb, its ok. but with a low carb one is surprising. Moreover, tell me in what way high fat decreases glucose level. Don't hi carb and high fat go hand in hand to accelerate glucose level or, it is not so. Please explain clearly.
