Gum disease is not caused by coeliac disease it it caused by plaque and also smoking is a contributing factor.

You can have something called an immediate denture fitted . Your dentist can take impressions of your mouth and have a denture made, so that when you go back for the extractions the denture can be fitted immediately .

This would be temporary as once the bone levels settle you would need a new one made as the immediate wouldn't fit properly.
