I have needed to move almost all protein to evening meal, my sleep has also deteriorated, so by evening I have minimal appetite, and hard time eating enough protein,
I eat mostly 100% grass fed meats and very little of that, allergic to eggs (thank you covid). Mostly salmon, chicken, some tofu, pea protein powder, and bits here and there from chia, avocado, almond butter..,
I know my protein intake is not enough, but I don’t know how to increase it.
I’ve thought of looking for sheep or goat whey… since whey is rapidly digested. Is that a good idea? Inflammatory?

That's a tough one. I have found I can eat some proteins during the day but not others. Eggs are a complete non-starter; meds totally won't work.
During the day for protein I spread a thick layer of hummus on gluten-free English muffins at lunch and put sautéed veggies and slices of raw radish on top. I add sliced almonds to breakfast granola for added protein. I don't drink milk or eat much dairy other than cheese (cheddar and feta mostly) due to lactose intolerance, which I think also inhibits med absorption. I eat very little beef; fish is a part of 2-4 dinners each week. Chicken once a week. I find easier to eat more chicken and beef if mixed with rice or farro as opposed to slices of meat along. Sometimes I'll snack on corn chips and hummus in afternoon. Put avocados on a lot of things when I can get good ones. Can't address the goat/sheep question. No real solutions but maybe something might help.
