I used to drink extremely heavily for several years, I'm now finding I occasionally have some symptoms of cirrhosis or serious alcoholic liver damage. I'm really scared I have the disease, but my symptoms are very on and off. E.G one day I had grey poop, then my poop was back to normal for many months, then one day I had yellow poop. I experience fatigue, shoulder pain, under rib pain, excessive sweating, nausea and gagging, mind confusion and mood swings off and on. Somedays I feel completely normal.

If you are concerned that you might have a liver issue especially in light of being symptomatic at times I suggest you make an appointment with your GP and get yourself checked out. You need to be honest about your alcohol intake and explain your concerns.
Liver disease is often a silent illness until it becomes advanced so it is best to identify it as soon as possible & yes even with advanced liver disease you arn't necessarily obviously poorly every single day.
Get checked out and take steps to address your alcohol intake.

There are many medical conditions that can cause the issues that you're speaking about. Lots of time stool changes can come from the pancreas as-well. Which, alcohol can damage too. If you believe it's your liver, go see your GP and try to get some blood work done. If blood work looks good, but you still fear that your liver is damaged, then push for a fibroscan. Jesus himself could have came down and said your liver is fine after having drug induced hepatitis. It took a fibroscan to make me feel better about the situation.
