For travel insurance purposes would a partially blocked LAD be classed as Atherosclerosis?

No-one on here can give you a 100% guaranteed yes or no answer, although in my view the answer is probably yes. The best indication you will get is by talking to a few travel insurance companies who cater for pre-existing medical conditions to find out. I suggest you do that.

Poking ay the definition of Atherosclerosis on the NHS website I would say you have. Worth a check with your GP though.
