Could you send me the recipe? I told my husband about it and he asked if I could adapt it to gluten free (love Doves Farm Freeee flours, so simple to use!) he'd like to taste-test them.

it;s so easy which is the best bit about it - you only have to stir. Now if anyone has worked out a Victoria sponge recipe I'd love to have it - I am currently working on one...... recipe sent via private message.

And, I hope, giving people a psychological boost as sitting, guilt free, with cake and a cup of tea makes me feel normal and much more cheerful...... hope it works for others. Perhaps we should hold a photo bake off in Micheal's Hearty Cafe.........
