Most simple way for perfect crackline is to firstr pour b0ilin g water aover roast skin,scour, salt...if not give perfect scoured crackling...will let u  do bad things  to me.

Dont know how this subject came up but I SO  love crackling, that with crunchies and Bourbon (rationed) have to be my favourite things to eat or drink.  XX

When we were in business, on the last day of the summer season, a Butcher, local to where we once lived in the Midlands, always visited us carrying a huge bag of what we called Pork Scratchings....pieces of deep fried pork rind  My husband and youngest step daughter would be waiting for him to bring the bag into the bar and they'd dive in before the people already in the bar were given some. I think a few pints gratis were involved.  I don't like Scratchings but even if I did I would never have stood a chance of a handful!
