Crazy Cake - free from most allergens!

Here is my crazy cake recipe!

Crazy Cake (Nut, Wheat / gluten , Egg & Milk Free)

From a charity recipe book (BTW it is a USA recipe hence cups)

1 & Half cups Doves farm Gluten Free Plain white flour (or Plain flour)

1 Cup of sugar

2 tbsp Cocoa Power

1tsp Bicarbonate of Soda

1 cup of cold water or strong coffee (CafeDirect Decaff!)

5 tbsp Oil (Sunflower oil works OK)

1 tbsp Vinegar (I use white)

1 tsp Vanilla

1 - Mix the dry ingredients together in a cake pan & make three depressions in the mixture. Put oil in one, vanilla in another and vinegar in the last one. CAN BE MADE IN A KENWOOD MIXER WITH THE WHISK.

2 - Pour one cup of water ( or coffee) over the mixture and mix thoroughly with a fork. ( Or use Kenwood)

Put in one big tin or in muffin tins lined with cake cups.

3 - Cook at Gas 4 or 180C for 25 minutes ( I did 5 mins extra for the large cake as was a little soft) 15 minutes is adequate for little cakes .

Remove when cake is cool ( Do carefully as it can be a little difficult)

4 - Ice if wanted ( didn't bother with this bit)

Happy eating! It is a dense soft sponge like consistency - bit like a chocolate muffin!

Tried again in muffin tin and it does work! Most cake like majority cake ingredient free cake have eaten!
