Why cheesy chips are great if you use the right potatoes!

I’ve ALWAYS been a fan of chips, but post op I haven’t been able to eat them due to bloating and dumping. So I’ve found a solution I would like to share.

1. Use waxy potatoes (asda Marabel potatoes)

2. Cut the chips thin, more surface area, less fluffy potatoes which are high GI.

3. Don’t over cook the chips, keep them al-dente.

4. Apple cider vinegar (lowers GI) and salt. A bit of chilli if you like that.

5. Cheese, as much as you like. This will lower the GI of the meal and slow digestion.

6. Two small portions, with a 15 min break between them.

I seem to have more problems with rice & pasta than chips, but you could try small new potatoes cut into halves or thirds, spray with "Frylite" low cal spray and bake in oven. Better than oven chips and no issues.

Hi jay. I bought an air fryer many years ago and those chips I could eat with less problems than oil fried chips. But still only a very few otherwise I will be asleep after supper guaranteed
