I wonder whether anyone else detects some link between out of date food and dumping. I have always liked seriously ripe cheese; even when it really pongs. Especially when it does! These days it seems to react badly and there seems to be a problem if I let milk go beyond its use by date too.

i work in food retail eat fresh food avoid ripe cheese if its out of date or going out of date don't touch it regard your stomach as a temple from now on hope this helps

Seriously, I don't think the date has any bearing. It's just the fat content and just possibly the bacteria in soured milk pose a problem; but I find live yogurt very helpful.
If you only indulge at midday then the after-punishment is bearable.
Cheese, milk & dairy caused me issues before my cancer and surgery. They still do. I love very strong blue cheese but it does not love me in return. Lactose Intolerance is very common and I suspect more so in people like us with shortened plumbing. I also love eating 'weapons grade curry' that now causes hiccups that put a stop to my enjoyment.
With me, it is cheese that can trigger dumping and it does not matter if out of date, strong or mild, or how much.
Also coffee if too hot, sugary cake and pastry, but from talks at our support group everyone is different and not one real common trigger identified. Everyone seems to have their own triggers and in time can ID and control them.
We must be the cheapest date in town ;^) I feel like everything I really want is now not 'good for me' and everything that I want is what everybody else enjoys. I have found that by eating a rate that would Brian The Snail proud, allows me get some enjoyment back. Also mentally plotting a direct route between my seat and the restaurant loo can avoid a panic later in the evening. Clutching your mouth and making gagging sounds as you career towards the loo, bouncing the seat back your fellow diners, seems to do little for their evening entertainment.
What I do like (and my wife hates) is ordering a normal human sized Indian, takeaway meal on a Friday evening. This can then last almost the entire weekend. By Monday everything else in the fridge, now smells and tastes of Curry. But I am happy and fed.
None of this helps in any way with your cheese chomping. But it does demonstrate my cavalier approach to food dates.
