As you know, the throat / larynx divides into a) the oesophagus going down to your stomach; and b) the trachea taking air to your lungs. You need both to survive and thrive. It will definitely depend on the details of your husband's surgery. There are some diagrams in the surgeons' talks on the OPA website opa.org.uk/regional-shop/lo... and it might help to try and work out whether your husband had a partial gastrectomy or not. I think you may need a further explanation from the surgeon.
But perhaps I have not really understood the details of your question?
It sounds as if there may be an issue with a 'cul de sac' that is not part of the new digestive route, perhaps because of proneness to infection or some other problem.
