I’m trying to reduce my family’s levels of meat consumption, I used to be veggie in my teens (a loooong time ago 😆) but I just used to replace meat with Quorn/Linda McCartney stuff, unfortunately the fam are not fans of ‘fake meat’. To be honest they aren’t fans of my meat reduction plans at all!
So I’m on the lookout for fairly healthy, fairly easy, not too expensive meals that don’t need meat (or fake meat) and would love any suggestions 😊

Hi Jen,I am not vegan but as a result of being pregnant I have stopped eating meat because I don’t like the taste anymore 😬
Here is what I do,
-To gave the veggies more taste I use tomato paste and it makes all dishes quite rich,
-To get more protein, I use grains like chickpeas, mung beans, lentils, beans,
-If all fam members are asking for meat everyday, just make one of the weekday as meat free day (I like the idea of meat free Monday).
-Using mung beans (can be replaced with other grains) I make fritters ( easy to batch cook and freeze) no one will ask for meat as they will feel full.
-look for more Mediterranean recipes online as they usually made with only veggies.
Thanks Bixteth, some good ideas there. We do already do one or two days meat free but I tend to make either butternut squash soup or a tomatoey pasta bake so need to widen my repertoire a bit 😆
I will look up some Mediterranean style recipes, we can pretend we’re on holiday, and ignore the snow outside 🥶😂
I used to have an Instagram page for my recipes (lockdown boredom) but when my nausea hit, I have stopped to cook and share the recipes however it is a small page that only my friends and family follows 🤣
There are some meat free recipes, like Cauliflower fritters, courgette sphagetti, crispy baked aubergine, leek and mushroom quiche etc. Have a look, it's called as "Bixtethkitchen". Page is not active but I still use it as my cook book so haven't closed it.
I also have found some recipes to give you some idea, however I haven't tried these recipes from these websites, as I already use our family recipes. But I have read them and they all look fine.
