I don’t like corn in any variation 🙃

Activity2004Administrator in reply toMrsMcFeron

That's okay. Not everyone likes everything. My mom doesn't like lima beans, but I'll eat both corn and lima beans either on their own or mixed together. I also eat corn on the side, in salads, in burritos, fresh and/or grilled/boiled/baked. :-) One of my favorite homemade items made with corn is gluten free cornbread. :-)

Just boiled for 15 minutes and then eaten with lots of lovely butter. A real treat because we don't have it often x

That's a good way to have corn. We had some recently at a barbeque that served it as baby corn on the cob. Really good. :-)

Hubby has just given our BBQ it's summer clean. We have family visiting for a few days so thought seeing as we are promised good weather, we might have a BBQ. Will do some as a side dish.

wow, I cook mine for no more than 5 min.

I used to but my hubby said it was too hard so followed instructions on pack which said 15 minutes and we enjoy it much more.

I dont normally eat corn but sometimes in the Summer I'll boil one and eat it covered in butter.

That sounds good. Do you have the corn at a picnic/barbeque? :-)

No, I just eat it at home.

I just had corn . Yummy 😋

What did you have mixed with the corn or on its own? :-)

I had boiled corn with fresh coconut 🥥 😋. I put tiny bit of butter sometime ( depends on my mood) on the corn 🌽 . Fresh coconut is beautiful and eating it with corn very filling.

That sounds really good! I like both corn and coconut. Do you have both with anything else? 😀👍

No not really.

Love fresh corn on the cob. I boil it with Cajun spices or shrimp boil, then drench it in butter. I really like it best when it’s thrown in with a batch of crawfish 🦞, garlic heads, onion and potato’s. (Crawfish boil). The corn picks up all the flavors. Sadly, living in Florida instead of Louisiana, Crawfish boils are rare to non existent. As a matter of fact, live, fresh crawfish in Florida is rare. But at home in the pot, my corn is almost as good. 😋

They all sound delicious, Isinatra . I had corn in a soup that wasn't vegetable soup a few months ago during the cold days in Spring and it was mixed with some potato pieces. :-)

Isinatra profile image
Isinatra in reply toActivity2004

Corn gives a nice color to soups. You make cornbread from scratch? That’s a lot of work. I usually get a boxed mix. I bet yours would taste great. Nothing like homemade anything.

Activity2004 profile image
Activity2004Administrator in reply toIsinatra

Thank you for saying that. I use a gluten free cornbread mix (that's homemade) depending on if we have everything already in the house. If we need to buy some of the items, then we wait until we have everything. :-)

Fleur29 profile image
Fleur29 in reply toIsinatra

Homemade cornbread is VERY easy. I don't like the box mix or even the recipe in the bag of cornmeal. Granny's recipe is what I use.

Isinatra profile image
Isinatra in reply toFleur29

I use the boxed sweet cornbread for convenience and it’s not bad at all. But I never turn down anything homemade.Especially with the word Granny in the recipe. 😋👍🏼

Most of the things I cook are either my grandmothers' recipes or based on their influence and advice. Cornbread is the first thing I learned to make after I got married and it's always a hit.

I also use a variety of corn, which is 'cornmeal polenta' and I use it to bake a 'Lemon Polenta' cake.

Those sound delicious. Thank you for letting us know. Will have to try and do them with a dinner coming up. Great idea. :-)

Same! 🌽 🍋 Absolutely delicious. 😋 Nigella Lawson’s recipe is very easy, quick & really good (although I use way less icing sugar than she does)! 😊

picinisco profile image
picinisco in reply toSimes11

Buona sera, Simes 11! Ah, so you are also acquainted with this special polenta cake?! I love watching Nigella and I really appreciate her recipes, but, AS you hint, she's a bit too much 'for' her use of sugar...and fats! I have to keep my Lupus Antiphospholipid condition (and myocardial infarction of 2020)🤣 in mind! I can't clearly recall where I originally found 'my' recipe...and I make it in a 'ring' cake tin. I use polenta and 'sponge flour' in the mix, no ground almonds. I add to the mix, the grated rind of one lemon. Instead of drizzling the lemon juice/icing sugar syrup over the baked cake, I make holes in the cake, with a skewer and drizzle the juice of one lemon into the holes. Icing sugar can be sprinkled on top, if you so wish! Anyway, we can both agree it's an excellent use of CORNmeal!!😍

Snap! 😄 Surprise Miocardial Infarction (2009 age 44), Auto-Immune conditions.. & a dislike of usual meds/side effects! 🤗 I use (love!) grounds almonds, but far less sugar in the mix and barely a tbsp for the drizzle/top. Stay well, Picinisco .. & I couldn’t agree more: « Knowledge is power »!😉 🙏❤️ Donna x

Hi Donna! I like your 'stance' on this...ALWAYS believed 'Knowledge is strength, POWER' and likewise, ignorance is anything but bliss!🤔. Lifetime of Lupus & other auto-immune conditions. If I hadn't 'informed' myself, from the start , I wouldn't be here now! Keep doing what you're doing! Paulette x🥰

I can eat it raw, right on the cob. But i usually cook it. I even make my own corn chowder.

Hello Activity2004, Thank you for the voting. Recently I been enjoying a spicy corn on the cob, with chilli, spring onion a bit of sugar, butter with fish sauce.

That's a great idea! I have corn mixed in sometimes with my Vegetarian chili when we have it for a dinner. Really delicious.

You're welcome about the poll. We enjoy posting them. We're glad you enjoy participating in them with all of us. :-)

Do you eat mixed vegetables without corn?

velvetD profile image
velvetD in reply toActivity2004

No, unfortunately due to Crohn’s disease and multiple resections my diet is drastically restricted now. In a past life I loved all things veg including sweetcorn 😀

Activity2004 profile image
Activity2004Administrator in reply tovelvetD

I understand that. I can't have wheat or anything made from wheat because I have a gluten intolerance to it. I've been on a gluten free diet for the last 7 years.

Well I loved fresh corn on the cob with lots of butter and salt!!! But my low carb diet and being diabetic for so long, I was told no more corn or sweet peas as both are too sweet for me !!

Corn in soup is really good and stays nice and warm. Are the soups cream based or vegetables mixed together? :-)

I like my corn in multiple ways Fresh, Frozen, On the cob with butter on top, with salad, on the side, mixed in with other veg. When I make my corn or corn on the cob I always steam it in a steamer it tastes a lot better and it is a much healthier way of cooking it plus easy dishes.I like the corn frozen as well because in the process of it they seal up the nutrients that are in the corn itself. You can also taste the freshness that is in the frozen corn.

I find you can also taste the freshness of corn on the cob because the cob itself is keeping it fresh plus I love it with butter ( in moderation) on top.

Loved taking part in this survey. Very interesting, you really got me talking as I love talking about healthy eating.

Can't wait for your next survey.

Hi Lotus-Blossom ,

Some of the answers you gave are exactly how I like eating/cooking with corn, too. Corn is one of my favorite types of food. :-)

Thank you for letting us know about the poll. They're fun! Our next poll coming up later next weekend is going to do with fruit. What is your favorite low carb. fruit? It's going to be multiple choice. :-)

I voted : Other: I have “Cornflour” a very fine white powder from a packet, and use it to thicken a sauce, usually cheese sauce, or gravy.

This sounds good! Do you use the cheese sauce for dipping or cover other food for certain parts of the meal? :-)
