I like tomatoes, cucumber and celery, too. I try to get/use cucumber and tomatoes in some of my salads when it's possible. One neighbor grows his own cucumbers and he gives me some now and then from his garden.
I used to grow cucumbers and tomatoes but I have a local farm shop who sell really tasty veg so I tend to buy from them. A basic salad for me is leaves, tomatoes, cucumber, beetroot, celery and onion with a simple vinaigrette dressing. I eat it with a garlic flatbread baked in the oven. Yummy 😻
Technically, any plant food with seeds inside is a fruit, even though we think of them as vegetables - e.g. tomatoes, cucumber, zucchini / courgettes, peppers, squash, eggplant / aubergine.
kale, rapini, asparagus, broccolini, fennel, artichoke...there are a lot more!
I like asparagus, too. I eat asparagus with some fish dinners now and then.
Yes! Yummy! I just made hollandaise sauce for some, lightly blanched. And I think I forgot brussel sprouts (roasted w olive oil) and arugula (in salad w lemon mustard dressing :o)

Broccoli, cauli and mushrooms appear on our plates weekly. Other ones that feature heavily would be: onions, peppers, green beans.
Same here, Cooper27 . Some of my favorite ones are green beans and cauliflower ( if I can get it) along with the above list in the poll. I picked everything. I use mushrooms for some salads and a few other meals.
We eat a lot behind this, but these are the ones that appear every week
I get a veg box delivered, it lets me try new things regularly too.
Do you get the choice of what's in the box, or do they surprise you each time they give you something? Sometimes, when you ask for a certain item at a store, they don't give it to you even if it's on a list of items you wanted when waiting for pick up.
It's a surprise each time (well, you get a list each week). Sometimes it's hard - last week I got 2 celeriac, and I really hate celeriac
And many more , never understood people not eating their greens !
i also enjoy fennel chicory, celeriac and avocado

Yes, there's a lot of low carb. vegetables. I love eating avocadoes in salad and on the side-- to name one. I also like cauliflower and broccoli the most.
avocado is great mixed with a little mayonnaise as a dip also finely grate with magimix sweetheart cabbage with grated raw courgette and raw sprouts with lemon and olive oil and pumkin seeds great salad plus green grapes fresh herbs if i have them too

I eat a lot of cucumber and tomatoes. Cabbage isn't on my menu because my husband had cancer and radiotherapy has left him with a bowel problem which cabbage aggravates.
It's good to hear that you have cucumbers and tomatoes. Do you mix them together to make cucumber tomato salad? That's one of my favorite salads to have if I can't get salad on its own.
I just slice them up onto a plate with mackerel. That is lunch most days, home made soup otherwise with carrots, swede, parsnip, celery and leeks whatever is lurking in the fridge.
Sprouts carrots cauliflower in fact most veggies, I don't eat meat any more since I had my gallbladder out.

I must admit I have not, peanuts are banned in our house as my daughter is highly allergic to them. I did like peanut butter back in the day, but nothing could override the taste of celery for me I'm sure!
I love my vegetables except Kale, it's the texture. Great survey to promote healthy eating.
I eat Flat Mushrooms every week made into a tasty soup, & knowing they are good for me,. I also eat cooked celery & have it as soup, as I’m sure I’ve read it’s good for inflammation. I love the taste and occasionally have it finely sliced in a winter salad. I like Iceberg lettuce but don’t eat it as much as I used to.
I eat tomatoes more than any other vegetable (or should that be fruit?!?) but I adore cauliflower particularly when it’s roasted in the oven. Nigella Lawson has a spectacular spiced cauliflower, tomato and chickpeas recipe on You Tube. I just use a lot less oil than she recommends ie one teaspoon rather than a tablespoon.

Sorry for late reply, probably not relevant now.....but anyway, I suppose broccoli, mushrooms and spinach are staples, but really as I said, they all are welcomed here, and lots more beside, bless them.
Vegetables lend themselves so well to either a main meal or a side.
Celery, for example, is lovely chopped small and sprinkled on top of any dish really, just adds crunch.
I liked the survey, which as others have commented, promotes healthy eating; very important, especially in these worrying days.
Actually, all the ones you have mentioned, can be eaten either raw or cooked (except iceberg of course).
