I went out for a Thai meal last week. The waitress advised me not to have coconut rice due to the emulsifiers used. Is this correct?

Not aware that there is gluten in coconut milk (which would probably have been used to make the rice). Coconut milk sometimes can contain guar gum or alginates which are gluten free.

I asked my local friendly Thai and we can't see any gluten in their ingredients. Ask to see the packaging if you go back.
