Potato has 1/4th carb as compared to rice / wheat. Why all say big "No" to potato?
Potato is 75% water.If you consider the dry weight,proportions will be similar.
There are different varieties of potato available - some are really sweet! So I suppose GI should vary for each variety. I have also read that eating boiled potato with skin is not all that bad - it may, in fact, be good for health. When potato is fried in oil, it turns out a bit harmful.
Is it ok to partly substitute rice with potato? Any real time experience?
Nutritionally speaking and as far as I know,potato is definitely better than rice.The nutrients like minerals and vitamins in a potato are found just beneath the skin.So,you have to see that that part of the potato is not removed while cooking.Avoid deep fried stuff like chips and french fries.Preferably,cook with other vegetables like bhindi,gobi etc.Keeping these in view,I see no reason why you should not replace rice with potato.

The question & discussion is centered on the measured quantity of carbohydrates in rice & potato. There are several other components in both of them. Many (or most) of those are very likely to be different in rice & potato. Those may be what gives them different shape, size, colour, flavour, consistency etc. Those also may be contributing to the different effect, if at all there is a different effect. Quantity of carbs need not be the only contributing factor.
More over some great people have told that MEASUREMENTS ARE LIMITED BY THE INSTRUMENTS. Some have told that the process of measurement itself affects the measurement.
The proverb "test of the pudding is in eating" appears to be more meaningful; I certainly do not look down upon testings & test results but am concerned about their limitations.
