Thank you! My brother-in-law is Cajun. He taught me a simple recipe. It also freezes well.

Although the peppers get a little soft with reheating, the Gumbo freezes well. I make a big batch and then freeze 2 more meals worth. I make fresh rice and it is a quick, yummy dinner.

It's a struggle for me to get the sausage here in SE England. It sounds delicious. Nice to have something in the freezer for when you are having a bad day.

My brother in law says get ingredients available that are good. It will still be yummy Gumbo!

Never heard of this but it sounds yummy will have to find if i can buy andoille sausages from somewhere near to me mmmmm.

They are spicy! Any sausage will work.

I have found a recipe for gumbo sausages. No way will I smoke them! Anyway, I have some casing and the machinery so I will give it a go. It's given me a bit of motivation. I have been getting what I guess is the progressive disease blues, I used to have a week or so feeling good now it's just a day or two in the week. Family spread all over, no close friends anyway counting my blessings. I think my husband understands. I don't want to wish my life away but I am longing for a bit of Spring
