We at contemplating going to Turkey for two weeks. Our lo will be 2.5 months old, but at that point would of only had his 8 week jabs. His 12 week jabs would be due when we are away.
Are we ok to go away on one set of jabs?

You need to speak with your doctor really. Though I wouldn't suggest travelling before an infant has had all their jabs as other countries don't vaccinate against all the same things and you could be putting your child at risk.
There are out breaks of measles all over Europe and Turkey currently. As he won't get his MMR until 12 months it wouldn't be worth the risk. Even if you aren't going to a country that is having problems, airports are still hot beds for disease transmittal from all over the world.
Speak to your doctor all the same, but both practices in my area were very much against leaving the UK until after the 12 month jabs had been received.
My baby had her injections a few days before I came away. I’ve only came to Sweden it’s 30 degrees here and it’s the worst decision I’ve ever made, she’s too hot she’s just crying all the time I wouldn’t advise taking your LO to turkey. Each to their own but it will be far too hot in turkey especially at this time of year xx
