Recipe - Warm Bean Soup

WARM BEAN SOUP ( serves 6 )

2 cups white kidney beans (cannelloni)

1-2 cups kidney or red beans (organic & canned or cooked from dry the night before)

1 cup chick peas (garbanzos-organic & canned or cooked from dry)

2-3 cups fresh spinach, washed, drained and chopped

OR 1 10-ounce package frozen chopped spinach

4 cups vegetable broth

2 onions, chopped

2 cloves garlic, minced

1 tsp. each dried basil and oregano

1 Tbsp. dried parsley

Pepper to taste

Add a light dusting of nutritional yeast on top before serving (optional)

Boil all ingredients together and bring to a simmer. Wait until onions appear clear and soft when pressed with a spoon.
