What is the best GF bread mix you can find?All the ones I've used so far have ended up coming out of the breadmaker like bricks. Unedible!
Try using Bob's Red Mill Gluten Free Bread Mix. It's expensive but it tastes great and in actual fact makes a rather gigantic loaf. I make two loaves and then slice them and freeze them, taking out a slice or two as required. This means no wastage. The texture of this bread is light and it has a good crust. You can buy this from Lavida Foods - online or also at most Waitrose branches.

I use the Juvela Fibre Mix which I get on prescription & it makes a really soft loaf. Are you using a Panasonic machine with the gluten-free programme
It is is quite correct that you want a bread maker that has a gf setting, I think this may be the same as a quick setting but you need to check with the manufacturers instructions. The gf setting means that the bread dough rises once and is then is baked. With wheat flour the dough is knocked back and then rises a 2nd time, well GF mixes do not rise a second time hence brick like loaves.
Also not all yeasts are fast acting and are not suitable for bread makers. This is about Alinsons traditional yeast which I use as I do not use a bread maker:

If you get bread flour on prescription then that usually come with instructions for a bread maker and a sachet of yeast so its easy peasy.

Mrs Crimbles Bread Mix. I make it in my breadmaker and it comes out amazing - exactly like "real" bread! It is the only gf bread my (non-glutenfree) husband will eat. HOWEVER it is only good on day one - day 2 it is more like dry gf bread (mainly due to the rice flour content I think). That isn't a problem for us a) because it is so good we eat it all within hours b) there are 6 of us!
I would give it a go. As gf bread mixes go it isn't particularly expensive and it is very easy to make.
